If you have seen some of the recipes that I have shared here on Your Fitness Path in the past, you probably already know that Mexican is one of my all time favorite cuisines. Plus, Cinco de Mayo is a great excuse to create a delicious Mexican feast or fiesta and enjoy the company of friends & family. You can definitely over-do it with Mexican food (I’m looking at you Guacamole…!), but fortunately for you, there are lots of ways to make healthy Mexican dishes that won’t break the calorie bank. Here are some of my favorites, what are yours?
Slow Cooker Healthy Chicken Fajitas
Looking for a great tasting, but easy fajita recipe? Look no further! This is a super-simple recipe that you can try the next time you are in the mood for fajitas, but aren’t able to commit a lot of time to prep. Despite the minimal prep time, these fajitas came out great – the chicken basically falls apart and the taste was amazing!

Chicken Tortilla Soup
With 6 mouths to feed in our family, dinners can be tough to find something that everyone agrees on and enjoys. This has quickly become a family favorite, especially during the winter months, it’s a great dish to warm-up with!

Mexican Black Beans
In case you haven’t caught on by now, I am a big fan of Mexican dishes. As a guy who is always looking to add some lean muscle mass to my frame with quality, great-tasting carbs, black beans are a side dish that has been a staple in my nutrition for several years. This Mexican black bean recipe makes a great side dish or can top the fajitas mentioned above!

Mom’s Homemade Salsa
I think that everyone can agree that there is at least one recipe that Mom makes be er than anyone else! Typically, this is a recipe that Mom has handed down over several genera on or perhaps she came up with on her own and has perfected it along the way. In fact, a lot of times, there isn’t a “written recipe” at all…Mom just knows how it is prepared and proceeds to nail it each and every me!
