I have always loved pancakes! Growing up, nothing could top waking up to the smell of pancakes for breakfast.
Just because you want to live a healthy lifestyle doesn’t mean you have eliminate foods that you enjoy. With that in mind, I thought I would create a list of some pretty awesome pancake recipes that I have tried over the years. Heck, at the Coburn household, we even schedule “breakfast for dinner” once or twice per month and pancakes are almost always included.
These are some of tastiest pancake recipes that I have found and not only do they taste good, but they are actually healthy. You won’t find anything but simple ingredients and minimal amounts of extra sugar with the recipes below.

Lemon Greek Yogurt Pancakes
Serves: 16 4-inch pancakes
Ingredients
- 2 cups white whole wheat flour
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- zest of 2 medium or 3 small lemons
- ¼ cup lemon juice
- ¾ cup milk
- 1 cup plain Greek yogurt (I use 2% or full fat)
- 2 eggs
- 2 tablespoons honey (or pure maple syrup)
- 1 teaspoon vanilla extract
Nutrition Facts (Per Serving, 1 pancake)
- Calories: 85
- Protein: 4.5 grams
- Carbs: 14 grams
- Fat: 1.5 grams
Chocolate Chip Banana Cottage Cheese Protein Pancakes
Serves: about 2 servings, 3 pancakes each
Ingredients
- 1 cup oats (rolled oats or quick-cooking oats will work)
- 1 banana
- ½ cup cottage cheese
- ¼ cup egg whites
- 2-3 Tablespoons almond milk
- ½ teaspoon cinnamon
- ½ teaspoon baking powder
- ¼ cup mini chocolate chips
- Toppings: banana slices, maple syrup, more chocolate chips, etc.

- Protein: 16 grams
- Carbs: 48 grams
- Fat: 12 grams
Five-Ingredient Pumpkin Protein Pancakes
Serves: 6-8 servings, 3 pancakes each
Ingredients
- 1/2 cup pumpkin purée
- 2 eggs
- 1/2 teaspoon pumpkin pie spice
- 1/8 teaspoon baking powder (optional but recommended)
- 2 tablespoons vanilla whey protein powder (optional; you can also add a touch of vanilla extract instead)

- Calories: 147
- Protein: 15 grams
- Carbs: 15 grams
- Fat: 3 grams
Low Carb Blender Pancakes
Serves: 8-10 servings, 2 pancakes each
Ingredients
- 2 cups old fashioned oats
- 1 – 16 oz container (or 2 cups) low-fat cottage cheese
- 2 cups egg whites
- 4 tsp baking powder
- 2-3 tsp honey / sweetener
- 1 tsp vanilla

- Calories: 128
- Protein: 16 grams
- Carbs: 12 grams
- Fat: 2 grams
Apple Cinnamon Protein Pancakes
Serves: 3 servings, 2 pancakes each
Ingredients:
- Nonstick cooking spray
- 1 medium apple, peeled, sliced
- ¾ tsp. ground cinnamon, divided use
- 4 large egg whites (½ cup)
- ½ cup unsweetened applesauce
- ¼ cup unsweetened almond milk
- 1 scoop whey protein powder, vanilla flavor
- ¼ cup old-fashioned rolled oats
- 2 Tbsp. coconut flour
- ½ tsp. baking powder
- ½ tsp. ground ginger
- 1 dash ground nutmeg

- Protein: 13 grams
- Carbs: 20 grams
- Fat: 2 grams
Blueberry Protein Pancakes (Egg-Free)
Ingredients
- 1/4 cup Whey Protein Powder
- 1 Banana (Large)
- 1/2 cup Almond Milk
- 1/4 cup Rolled Oats (Gluten Free)
- 2 tbsp Coconut Flour (Or casein)
- 38 g Blueberries (a handful)

- Calories: 444
- Protein: 32.8 grams
- Carbs: 28.4 grams
