You already know that vegetables are an important part of your nutrition and yet, despite that you barely include them in your daily meals or avoid them altogether. I get it…you aren’t a big fan of vegetables… In fact, you may actually hate them with a passion.
Your hatred is forgiven.
To be perfectly honest, fresh, raw vegetables aren’t for everyone. However, with a little bit of extra know-how and prep, you may just find yourself enjoying vegetables that upon site, you once ran in the opposite direction.

Roasted Root Medley is definitely one of my favorite recipes when it comes to vegetables. Simple to prep and easy to enjoy! The onions and sweet potatoes take on a caramelized flavor that added a little bit of sweetness to the whole thing and it’s an awesome side dish.
Prep Your Veggies Like A Pro
Being a Precision Nutrition, Certified Nutrition Coach, I have access to some incredible nutrition related resources. So I am sharing with you the process that Precision Nutrition has suggested to help you overcome your vegetable trepidations.
1. Challenge
Choose your veggie! Perhaps you could pick something that you’ve never tried to avoid any past memories from creeping in the moment you bring the vegetable to your mouth. However, in some cases your tastebuds may have changed a bit since you last tried that particular veggie and now it’s more acceptable to your pallet.
2. Compliment
Time to spice it up! While salt and pepper are awesome ways to enhance the flavor of many foods (including vegetables), expand your horizons a bit and consider a variety of spices. Need some ideas? Check out the infographic below for some examples.
3. Soften
Including a little bit of fat or a little bit of sweetness can further enhance the flavor of many veggies. Moderation is important here, you don’t want to drop 5 tablespoons of butter or 1/4 cup of honey into your recipe, that’s a bit counter productive here.
4. Prepare
There are a number of ways that you can prepare vegetables as indicated in the infographic below. A couple of methods that aren’t mentioned; grilling or roasting. These are actually my favorite ways to prep vegetables and it works out great if you are already including something from the grill or the oven in your meal. Keep in mind that each method will vary in the amount of time for prep, so plan ahead accordingly.
