Egg White Muffins
This recipe was introduced to me by a good friend and I gotta say, they are pretty awesome! This a great recipe to prepare on a Sunday and then use the dish as an “on-the-go” breakfast or snack! Since we are only using egg whites and minimal amounts of other ingredients they aren’t particularly calorie dense, but pack some good protein along with a kicked up variation to just plain ole egg whites.

Ingredients
- 4 cups liquid egg whites
- chopped green onions
- chopped green peppers
- non-fat feta cheese crumbles
- sliced tomatoes
- Mrs. Dash Southwestern seasoning
Instructions
- Preheat oven to 375
- Fill each muffin cup 1/4-1/2 way full of green peppers & green onions
- Sprinkle a little nonfat feta cheese in each
- Pour 1/3 cup liquid egg whites (=2 eggs) in each
- Season with Mrs. Dash Salt-free Southwestern Chipotle seasoning to taste
- Top with slice of tomato
- Bake at 375 for 40 min
At 30 min and they were still just a tad runny, but 40 minutes was perfect. You can throw half of them in the freezer and the other half in the refrigerator for convenient microwave preparation in the morning!

Yield: 12 servings (equivalent to 2 egg whites)

Made these on the weekend, super simple and certainly easy to suit your own taste. I didn’t have liquid egg whites but made with whole eggs instead and turned out great. Had an issue with the bottoms sticking and not coming out as clean as I had hoped but plan to spray a bit more cooking spray next time to increase. For me 30 minutes were enough so im sure it depends on ovens and ingredients.. Thanks for sharing Chris, nice way to spice up my morning routine.
